Syrniki with caramelised pears
Golden outside, tender inside. Dry farmer cheese, a little semolina and a short rest keep these pancakes soft without a flour-heavy batter. Serve with glossy caramelised pears.
DASTALI PRONTOSTEP BY STEP
Let’s make it, step by step
- 01
Choose dry cheese
Use firm, dry tvorog or farmer cheese. If it is wet, drain it in the fridge in advance and weigh out 500 g afterwards.
- 02
Mix and rest
Combine the cheese, egg, vanilla sugar, salt, semolina and 30 g sugar. The mixture should be soft but shapeable. Rest for 15–20 minutes.
- 03
Prepare the pears
Chop the walnuts. Core the pears and cut into lengthwise wedges. Leave the skin on if you like.
- 04
Shape the pancakes
Divide into even portions. With a little flour, roll into balls and gently flatten. Use a glass or scraper to tidy the sides, then brush off excess flour.
- 05
Fry until golden
Heat the oil over medium heat. Fry the pancakes with space between them. Turn when golden and cook through; lower the heat if they brown too quickly.
- 06
Caramelise the pears
Melt the butter, add the pears and 20 g sugar. Turn carefully until soft, golden and glossy. Brandy is not needed for the alcohol-free version.
- 07
Serve beautifully
Plate with the pears, walnuts, honey, icing sugar and vanilla ice cream. Add cinnamon if you like.

Your recipe questions, answered
Which cheese works for syrniki?
Use dry, well-drained tvorog or farmer’s cheese, ideally 5–10% fat. Wet cottage cheese is not a direct like-for-like substitute.
Is flour mixed into the batter?
This version uses fine semolina in the cheese mixture. Flour is for shaping only.
Can I make the pears without alcohol?
Yes. The written method caramelizes the pears with butter and sugar, without flambéing. Alcohol is optional, not a requirement.
